Quick Coconut Cake

Inspiration borrowed from the CWA

People required to devour: 8+

 

1 cup desiccated coconut

1 cup SR flour, sifted

1/2 cup sugar

1 cup milk

2 cups icing sugar, sifted

 

Turn oven to 180oC and grease a loaf tin.

 

Mix coconut, flour, sugar and milk together. Pour into tin and bake for 45 minutes.

 

Icing- mix icing sugar with enough milk or water. Spread on cooled cake.
